- 3 cups fruit pulp (leftovers from making juice in your juicer)
- 15 ounces canned, steamed, or boiled pumpkin
- 2 ripe bananas, mashed
- 1 Tablespoon vanilla extract
- 3 cups oat flour (or any flour)
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 Tablespoon cinnamon
- ¼ cup powdered Stevia
Nuts, raisins, flax seed
Preheat oven to 350 degrees.
Mix wet ingredients and add to dry ingredients. Add optional ingredients if desired.
Grease muffin tins and then fill with batter.
Bake for 30-35 minutes or until cooked through.
